Oatmeal Blender Pancakes:

Adapted from Oatmeal Blender Waffles by Don't Waste the Crumbs

Try our family's favorite recipe for healthy breakfast pancakes if you are:

  • Needing a gluten free breakfast option that is readily available

  • Wanting a healthy alternative to conventional pancakes

  • Tired of regular oatmeal

Ingredients you'll need:

Step 1. Melt butter and set aside to cool slightly.

Step 2. Measure dry ingredients oats, baking powder, salt, and cinnamon into the blender. Process on high until the mixture resembles flour, about one minute. We have a Blendtec Blender and I use blend setting 1 (or the up arrow 1 time until it looks right.)

Step 3. Add 1 cup of the water, eggs, on high (or the Batter setting), for about one minute.

Step 4. Add the butter and again, blend for about one minute.

Step 5. Allow the batter to sit for 5 minutes while your pans or griddle preheat. We use this cast iron griddle on the stovetop.

Step 6. Test batter thickness. At this point the batter should be thin enough to run off your spoon into a perfect pancake shape. If it doesn’t, add ¼ cup water and re-blend.

Step 7. Grease your pan or griddle with a thin layer of butter. You don't want these masterpieces to stick!

Step 8. Cook your pancakes until dry on the outer edges, a bit longer if you want some color on your pancakes. Flip. Second side won't take nearly as long.

Step 9. Repeat with the remaining batter.

TIPS

  • You can use this same recipe in the waffle iron for something different or to finish up cooking faster!

  • DAIRY FREE: If you need this recipe to be dairy free, we swap coconut oil for butter 1:1)

  • Add a cup of water and a squirt of dishsoap to your Blendtec and blend on setting 1 to wash, easy peasy!

  • I can safely double this recipe in my Blendtec...NOT triple!
